Constant State of Improvement

So we are going to get some feedback soon. Wes gets his labs drawn this coming Wednesday, and we are anticipating good results. In the meantime it has been a great weekend, conquering more vegetables and getting in some healthy Florida sunshine. Friday night we ended up at a swanky Naples restaurant, where Wes came to terms with brussels sprouts and decided they are not that bad, especially when they are browned. I will be making brussels sprouts with dinner this week since they are one of my favorite veggies.

Saturday morning I was able to get in a good 6 mile run with my running buddies, and Wes got in his 4 miles along Gulf Shore Boulevard, where you join many bikers, walkers, and runners as you burn calories and get the miles in. The weather has been absolutely gorgeous, this morning included. We hit up the local farmers market after the run, picking up brussels sprouts, grape tomatoes, kale and mango. There was also a booth for a local store that makes seasonings with no salt and preservatives using only organic ingredients. We loaded up on the fajita seasoning to use instead of the traditional store bought seasoning that sends daily sodium through the roof!

Wes also ate fish this weekend…. with cauliflower! Impressive I know! Now the cauliflower wasn’t whole, it was pureed into a “cream” sauce for the tuna casserole. He also couldn’t tell if the tuna was fish or chicken, and that’s a good thing for a guy who doesn’t like fish.

Sunday’s lunch ended up as a masterpiece of simplicity, packed with protein and Wes’ favorite flavors. Using what ingredients he has on hand at his quaint bachelor pad turned out a lot better than I imagined. A light Italian Flatout, 1 cup of cottage cheese, 1/4 mozzarella cheese with Italian seasonings and garlic powder toasted up into a nice italian cheese style quesadilla, with a little pasta sauce on the side for dipping.

The afternoon became a mini day trip down to Marco with Wes’ parents. We walked the beach and stopped off for a delicious oceanfront dinner, all with perfect weather. We got our steps in pre and post meal… and may or may not have stopped off for a small dip of ice cream on the way home. Rationalizing this act with his blood draw being over 72 hrs away ;)
