After a early morning run, I quickly threw this meal in my slow cooker and still got to work on time! I really suggest you try this one… amazing flavors!
Slow Cooker Pesto Ranch Chicken
This recipe was adapted from: http://picky-palate.com/2012/09/20/pesto-ranch-crock-pot-chicken-thighs/ and has been viral all over pinterest. Here are my tweaks to rehab this meal into a healthier, yet still very tasty meal!
1lb chicken breast
½ jar pesto
½ packet ranch seasoning
1 cup low sodium chicken broth
Spray slow cooker with nonstick cooking spray. Place chicken in the slow cooker and spread about ½ a jar of pesto (or about ⅓ cup) onto the chicken breast. Next sprinkle half the packet of ranch seasoning over chicken. Nestle baby carrots around chicken. Pour about a half cup of chicken broth on top. Cook on low for 6-8 hrs.
We plated ours with Dreamfields pasta and topped with some grated Parmesan cheese. If you can believe this, Wes actually asked for more carrots! This one is going to be put into our weekly menu rotations, a new favorite!
One quarter of this recipe has 280 calories, 26 grams of protein, 8 g of carbohydrates (counting the carrots only, not the pasta), and 13 grams of fat (healthy fats from the pesto!). This definitely is a 5 star meal…simple and delicious!
