To be honest, I found the inspiration for this recipe somewhere out there in the blogging world but for the life of me I couldn’t find the recipe again. So I had to make it up my own. I knew they used sunflower seeds, ground in a blender with some sort of seasoning….so I went with that idea and ran with it. Now I bring you:
Flax and Sunflower Seed Baked Chicken Bites
1 lb chicken breast or tenders
¼ cup sunflower seeds
¼ cup ground flax seed
herbs and seasoning of choice
Preheat oven to 400 degrees. Pulse sunflower seeds, ground flax seed with seasonings in a food processor (or Magic Bullet in my case). Cube chicken, moisten with water and roll in the “flour”. Spray baking pan with nonstick cooking spray and place the “breaded” chicken in the pan. Bake for 20-30 minutes, or until fully cooked.
I served the chicken with homemade baked sweet potato fries. Tossed in a bit of olive oil and sea salt, the sweet potato fries baked at the same temperature and for about the same length of time as the chicken bites. The timing was perfect, and I can’t say that is always the case when it comes to throwing dinner on the table.
You can take the flavor of these chicken bites in any direction you want! Paprika, Italian herbs and spices, salt-free seasoning blends, garlic powder, cayenne pepper… really the options are limitless! I will leave that last bit of creativity to you!
