Today started with a shake on the way out the door… another crazy day. I have been experimenting with pumpkin this week, since the can is open, now I have to use it up. It also gives me a chance to perfect my smoothie.
¼ cup pumpkin
¼ cup unsweetened applesauce
2 Tbsp nut butter (almond or peanut butter)
½ cup unsweetened almond milk (or sub skim milk)
1 Tbsp ground flaxseed
1 tsp honey
cinnamon, pumpkin pie or apple pie spice
Of course at 7:15am I am not actually measuring these things out, so they are all approximate. I feel like banana would work well in this smoothie… but I hate bananas. Also, add 1 scoop of vanilla protein powder if desired. The smoothie above is about 320 calories with 11 grams of protein, 26 grams of carb and 22 grams of fat (heart healthy fats!).
I had one of my favorite fruits this morning as a snack, pineapple! Sweet and Juicy and that mid morning pick me up, whether it’s endorphins or energy, to make it to lunch. I was really looking forward to lunch because this lunch was leftover from the night before.
Shrimp was involved since Publix was running a special. I was surprised that even after I microwaved the leftovers, I still really enjoyed the shrimp. I had made chickpeas, shrimp and veggies tossed in a homemade pesto. The only part that didn’t really work was the avocado. Last night I stirred it in after taking it all off the heat, and let’s just say they didn’t microwave very well. I love bring leftovers for lunch, it requires much less packing and usually really good food.
This afternoon I tried a new bar I picked up this weekend at the store, Go Raw, Live Pumpkin Bar. What attracts me to a bar like this is the ingredient list – Sprouted organic pumpkin seeds, sprouted organic flax seeds, organic dates, organic agave nectar, Celtic sea salt.
Wow! I know what all of those things are! I liked this bar because of the crunch it has and it tastes good! I highly recommend trying it!
My dinner was a healthier version of a taco salad: grass fed ground beef with black beans on top of romaine lettuce with a tomato and avocado puree. I have been told it does not look the most appealing, but it satisfies me.
Once dishes were done, I had a little treat. Chocolate :)
