Simple, Healthy Chicken Parm!

Here is how I make chicken parmesan. Wes of course, likes all the manly meals, so this recipe is healthy yet flavorful as always. You may notice that I use ground flaxseed as a coating quite frequently and this is because Wes and I both eat gluten free. The ground flaxseed also provides a dose of healthy fats and some fiber.


3 chicken breast

1/2 cup ground flaxseed

¼ cup grated parmesan cheese

1 Tbsp italian seasonings

1 tsp garlic powder

1 Tbsp olive oil

1 jar spaghetti sauce

3 slices mozzarella/gouda


Preheat oven to 400 degrees. Mix flaxseed, parmesan cheese and seasonings in a shallow bowl. Fillet (cut in half) chicken breast, run under cool water and coat in “bread crumb” mixture. Next, heat olive oil in a skillet over medium heat. Sear each side of the chicken breast until golden brown (2-3 minutes a side once the pan warms up) then place in a 9×13 baking dish that has been sprayed with non-stick spray.

Spoon spaghetti sauce over each chicken breast and bake for 20 minutes. Remove from oven and top each chicken breast with half a slice of cheese and bake for 10 more minutes. Bon Appetite!

Tonight I served this with spaghetti squash and mushrooms, which didn’t appeal as much to the manly man as it did to this healthy hungry girl!

Quick Tip: Store flaxseed in the refrigerator to keep it from going rancid.
