I can’t believe I have waited this long to make my own homemade protein and energy bars! One of my first loves in the kitchen was cookie baking and mixing up these bars felt right at home. I love bars for their convenience and snack-ability and I wanted my recipe to have quality ingredients without all the artificial and chemical ingredients that you would find on the shelves. These are going to become a staple around here, Wes and I were blown away by the authentic oatmeal cookie taste!
2 cups old fashioned oats (gluten free)
2 scoops vanilla protein powder
3/4 cup plain almond milk
1/2 cup natural peanut butter (no sugar listed in the ingredient list)
1/3 cup butterscotch chips
1 TBSP natural maple syrup
2 tsp cinnamon
1/2 tsp nutmeg
Combine all ingredients in a large mixing bowl and stir. Spray an 8×8 or 9×4 baking dish with non stick spray and press mixture into bottom. Use a saran wrap to keep the dough from sticking to your hands. Cover and chill for about 30 minutes and then cut into bars. I recommend putting them in individual baggies or wrapping with saran wrap as to not eat them all at one time!
Different brands of protein powders have different tastes. I used the Sunwarrior vanilla, which is a plant based protein powder sweetened with stevia. Difference in protein powders may also change the consistency of the dough. If it is sticky or runny add more oats. If it is to thick to stir and blend evening add a bit more almond milk. I also use gluten free oats from Bob’s Redmill, I love them!
