What I’m Eating Wednesday! Recap: September 4, 2013

You know it’s been a long day when I have to check my own facebook to see what I ate today so I could write you this recap. I just spend the best part of the last two hours completing assignments for grad school, and I am loving my first course, sports nutrition (more to come on that soon) – but you could say my brain is fried!

For breakfast I microwaved some maple Jones Dairy sausage links and sliced up a fresh organic peach. I have been on a peach kick and I have a feeling they are quickly fading out of season (this mornings peach was not the sweetest that is for sure).

A protein packed breakfast like that got me all the way to lunch. I brought leftover salsa chicken with a brown rice tortilla and half of a mashed avocado. Salsa chicken is the best because it is a slow cooker dinner. Tuesday I literally filled the crockpot in less than two minutes and had an amazing dinner waiting for me, and then got to enjoy it again for lunch today! I am going to definitely put my crock pot to good use these next two years with my online classes.

I had nothing in particular planned for dinner tonight (a bit odd for me), so I played around with one of my favorite recipes, protein oatmeal pancakes. Here is what I concocted tonight:

3 egg whites

½ cup oats

2 TBSP almond butter

1 TBSP slivered almonds

cinnamon

You cook this batter just like you would pancakes. I sliced up an apple and sprinkled the entire plate with more cinnamon. It was quick, easy clean up and had me on my way doing homework in no time!

Wednesday snuck up on me this week, after the long holiday! Cheers to being over halfway through!
