October 9th already?! Halloween candy is popping up everywhere and I hope you all are avoiding the temptations so far! This morning I got in an early walk and had a simple breakfast, an organic gala apple with almond butter. Simple, easy, yum.
I ate lunch from the cafeteria today. Luckily I have some pretty rad options available due to one amazing chef in the house. Today I had pesto zucchini “noodles”, with a tomato, onion and feta balsamic salad, and a diced chicken breast on a bed of spinach topped with some nuts and seeds. FLAVOR FLAVOR FLAVOR! Really vegetables are so good, and everyone can learn to enjoy them with a little prep work. After lunch a snagged a brownie from a bake sale…. it was so good I forgot to take a photo… no evidence!
Tonight I made spicy garlic lime chicken with sweet potato fries and salad. The spicy garlic lime chicken actually come from the costco recipe book, not my typically cookbook. However Wes’ sister made this for us one night and we absolutely loved it and she passed it along to me. She also used the same seasoning on some shrimp, which was divine and it would also be a great flavor for fish. I made homemade sweet potato fries, getting two servings from a large spud. Then I made myself a nice side salad, which the fiance still absolutely refuses. And that was dinner!
We got in a nice walk after dinner and now it homework time… I am wrapping up my first grad school class and learning so much! Stay tuned for some sports nutrition highlight coming soon!
