Peanut Butter Chocolate Chip Power Bars

The Butterscotch Oatmeal Power Bars were such a hit that I immediately experimenting on the next homemade no bake energy bar. A batch of power bars has become part of the weekly food prep routine around here. I love mixing them up and best of all, the whole process takes less than 10 minutes, from pantry to chilling in the fridge! I have found the power bars as an excellent post workout snack. The combination of protein, healthy fats and carbs satisfies me and gives energy to conquer the next task.

Ingredients:

2 ½ cup Old Fashioned (GF) Oats

½ cup natural peanut butter

2 scoops protein powder

1 Tbsp local honey

¼ cup mini chocolate chips

½ cup almond milk

Directions:

Add all the ingredients into a large mixing bowl and stir together
thoroughly. Spray the bottom of a 9×4 with non-stick spray and press
mixture into pan. Refrigerate for a couple hours and cut into squares.

Tip:
Put a plastic baggie over your hand to press mixture into pan. This will keep the dough from sticking to your fingers and allow you to firmly pack the bars.
