Our Sunday

Another weekend has come and gone… and they always go too fast! Sunday is one of my favorite days of the week, a day to relax, to catch up and plan for the week ahead. There are never enough hours in the day or the week, but sometimes you may find a couple extra on Sunday.

Today we made it to one of the farmers’ markets in town. I always feel like I scored a huge deal when I leave with a bag full of fresh, local and organic produce that would easily have cost 30-50% more at Publix. We have been loving the green beans lately, as they are easy to prepare on the fly and Wes will eat them. We also picked up a butternut squash, a head of romaine lettuce, a pattypan squash, and a beet. Something that may surprise you is that I have never even prepared some of these items at home before. I enjoy the challenges that the farmers’ market brings, and the variety that it pushes us to try.

I also was able to break out my rollerblades today. They live in my trunk, but have not made too many appearances here in Florida. Rollerblading is one activity that I really love doing. It may not be practical everyday, and I did break my arm in the second grade on them, but it is fun! I always recommend that you find some sort of exercise that you love, so you will get out there and do it, and therefore I had such a refreshing and enjoyable workout today.

We roasted up the butternut squash and the beet tonight. You may wonder why only one beet? Honestly, I have never made them before so it was a bit of a practice run. Crazy as this sounds, Wes was the one who picked out the beet and actually stole a bite off of my plate! He loves beets! The butternut squash was also enjoyable and easy to prepare. We (Wes really did help) roasted the squash and the lone beet in the oven, and seasoned them lightly with olive oil, salt and pepper.

Now, lunches are packed and we have a few more hours to enjoy before the holiday week begins. This Sunday definitely brought some rest, relaxation and rejuvenation :)
