So as many of you know I have a New Year’s Resolution to use my crock pot every week. I would say I am about 80% for the year on using my crock pot. My favorite recipe is the Salsa Chicken, however this next recipe is giving it a run for it’s money in the simplicity and in the flavor department. We are digging deep for those health “manly” recipes to keep my skinny-fat boyfriend satisfied. This next crock pot creation is a healthy take on buffalo chicken dip, without the cheese and cream.
Slow Cooker Shredded Buffalo Chicken Wraps
1.5 lbs chicken breast
1 1/2 cup buffalo/hot sauce
1 packet ranch seasoning
Flat Out wraps
Fat free plain Greek yogurt
Spray crock pot with non stick cooking spray. Place chicken breast in bottom of slow cooker (I again put my chicken in frozen, knowing that I would be gone 8+ hrs). Pour the hot sauce over the chicken and then sprinkle the ranch seasoning on the top. Cook on low for 6-8 hrs (mine cooked for 9.5hrs and was fine) and shred chicken with forks about a half hours prior to serving. Serve shredded chicken wrapped in Flat Out with Greek yogurt to taste.
Disclaimer – This will be a recipe high in sodium due to the hot sauce and the ranch seasoning packet, however unlike your favorite bar wings there is relatively no fat. When picking a buffalo sauce, avoid those with fats or are made with butter (like Hooters).
The shredded buffalo chicken wrapped up in a Flat Out adds whole grains and a healthy dose of fiber. I needed to cool this flavor down a bit and mixed the shredded chicken 1:1 with the fat free Greek yogurt. Serve with fresh celery and a nice mixed green salad to help cool down this hot and spicy entree!
